Eggplant soup/ Spring pilaf

Make your iftar healthy in Ramadan!
Today is the 14th day of Ramadan. We present you two delicious recipes, one of which is soup, which you can prepare for Iftar.

Eggplant soup

Ingredients:
• 3 eggplants;
• 2 tablespoons butter;
• 1.5 tablespoons of flour;
• 1 glass of milk;
• 5 glasses of water;
• 1 teaspoon of salt;
• 1 teaspoon coarsely ground black pepper;
• 1 clove of garlic;
• A small amount of dill;

Preparation:
1. Roast the eggplants;
2. Melt the butter in a soup pot and lightly fry the flour;
3. Cut the roasted eggplants into cubes. Turn the eggplants along with the fried flour, add the crushed garlic.
4. Add the water slowly and after boiling a little, add the milk and mix.
5. Then add salt and pepper and garnish with chopped dill if desired.

Spring pilaf

• 1 tablespoon butter;
• 2 cups of rice;
• 1 tablespoon olive oil;
• 2.5 glasses of water;
• 1 root;
• 1 cup green peas;
• 1 small bowl of chopped dill;
• Salt, pepper.

Preparation:
• Wait for the rice to rise in the water, then strain the water;
• Put butter and olive oil in a pilaf pot and heat. Peel a squash, grate it and cut it into small cubes. Then add to the pot and start frying. Try to chop the root finely and small, otherwise it will not cook at the same time as the rice;
• Next, add the rice and fry together for a few minutes. Add salt and pepper;
• Add green peas. After adding the water, cook on low heat with the lid closed until the water is absorbed;
• After draining the water, turn off the heat, add the finely chopped dill, stir and wait for about 20 minutes for it to brew. Then you can serve.
