Yayla Soup for Ramadan

When breaking the fast, it is very beneficial for the digestive system to start with soup before moving on to the main course. If you want to try something different for iftar, this blog is just for you.

The taste of Yayla soup, a specialty of Turkish cuisine, is actually quite familiar to us. Both its appearance and flavor resemble dovga. Let’s prepare this delicious soup together using an easy method. If you are missing any ingredients, you can get them from your nearest Araz supermarket.

Ingredients:

  • 2/3 cup round-grain rice
  • 2 egg yolks
  • 3 tbsp flour
  • 4 cups yogurt
  • 8 cups water
  • 25 g butter
  • 2 tbsp dried mint
  • Salt

Preparation:

  1. Wash the rice thoroughly, add 6 cups of water, and set it to cook.
  2. In another bowl, whisk together yogurt, egg yolks, flour, and water.
  3. When the rice is cooked, gradually add the yogurt mixture, stirring frequently (as with dovga). Once it begins to boil, stir for another 5–10 minutes and add salt.
  4. In a pan, melt the butter, add dried mint, and stir for 2–3 minutes.
  5. Finally, add the butter–mint mixture into the soup and mix well.
